3 Ingredient Chia Pudding
One – of the only – downsides of living in Italy and being surrounded by food and foodies, has been the sudden absence of healthy meals in my diet. Not wanting to pass up a single opportunity for fresh pasta, pizza, panzerotti or gelato, I have done just that – not pass them up. The result has been my constant questioning of how Italians seem to stay so slim. I decided that if I could control, and stick to, one light, healthy meal at breakfast, then the rest of the day would balance out. Chia pudding is incredibly easy to make and I do so the night before, to make my mornings a little easier. Topped with fresh fruit and granola or peanut butter, it makes for the perfect, protein-packed, healthy breakfast. Or the perfect excuse to not hold back on indulging later in the day.
Ingredients (Serves 1)
1/4 cup chia seeds
1 cup milk of your choice (I use soy milk)
1 tbsp maple syrup or honey
Toppings of your choice
- Combine chia seeds and milk in a small container
- Add in your sweetener and mix well. Cover the container and leave in the fridge overnight.
- In the morning, the seeds & milk should have formed a pudding. Stir, pour into a bowl, top with fruit of your choice and enjoy!
